This week you are looking at a picture of their mouth-watering Butterflied Pork Roast.

Butterflied Pork Roast
Cook time 25 minutes
2-3 lb boneless pork loin roast
½ cup Chef Scotty’s special naughty rub
2 tablespoon minced garlic
1 teaspoon ginger root minced
1/3 cup hoisin sauce
2/3 cup catsup
1 tablespoon soy sauce
1 tablespoon sherry
½ teaspoon salt
Cut roast almost through and open
Lay out flat and put rub on both sides let sit 15-20 mins
Place roast on oiled broiler pan and cook 20 minutes
Turning once or twice
Using remaining ingredients heat to boil in a small sauce pan
Then turn to low
Baste after 15 mins and coat to glaze
Cook 5 minutes longer and serve
